8 stalks asparagus, bottoms trimmed, cut into 1-inch segments

1 large shallot, chopped (or ½ cup chopped onion)

2 ounces goat cheese, crumbled

Directions
In a medium-sized bowl, whisk together the eggs, salt, and pepper until they form a smooth and frothy mixture, which should take approximately 1 minute. Let this mixture sit at room temperature for at least 15 minutes. During this time, you'll notice the eggs undergo a noticeable darkening in color.
While you wait, take a 10-inch nonstick skillet and place it over medium heat. Add 1 tablespoon of butter and let it melt until it turns a light golden brown. Add the asparagus, seasoning them with salt and pepper. Cook, occasionally stirring and tossing, until the asparagus become tender and start to take on a lovely brown hue, which should take roughly 2 minutes. Next, add the shallot and continue cooking until it softens, which should also take about 2 minutes. Once done, transfer this mixture to a small bowl.
Clean the skillet with a paper towel, and place it back on medium heat. Add the remaining tablespoon of butter and cook it until it turns a light golden brown.
Take your beaten eggs, whisk them again until they become foamy, and carefully pour them into the skillet. As the eggs cook, use a silicone spatula to gently push the edges inward toward the center. Tilt the skillet to allow the uncooked egg to spread evenly underneath.
Continue this process, working your way around the skillet, until the omelet is nearly set. At this point, sprinkle the cooked asparagus, softened shallots, and crumbled goat cheese over one half of the omelet. Then, remove the skillet from the heat, cover it, and let the omelet rest until it reaches your desired level of doneness, which should take approximately 1 minute.
Using the silicone spatula, gently release the omelet's edges from the skillet. Give the skillet a gentle shake to confirm that it's not stuck. With care, fold the omelet in half, and then smoothly transfer it onto a serving plate. It's ready to be enjoyed right away
