One of the beauties of Huevos Rancheros is its versatility. Feel free to personalize it by adding ingredients like sautéed bell peppers, onions, or even a touch of smoky chorizo for an extra dimension of flavor.
 
                      Ingredients
- 
4 slices of bacon, chopped (can substitute with 4 tablespoons olive oil) 
- 
½ large onion, chopped (about 1 cup) 
- 
1 green bell pepper, chopped (about 1 cup) 
- 
1 teaspoon salt 
- 
1 jalapeno, seeded and finely chopped (optional) 
- 
3 medium garlic cloves, minced or grated on a Microplane (about 1 tablespoon) 
- 
1 tablespoon cumin powder 
- 
1 teaspoon dried oregano 
- 
1 chipotle chile packed in adobo sauce, finely chopped, plus 1 tablespoon of the adobo sauce (optional) 
- 
One 14.5-ounce can crushed or diced fire roasted tomatoes (or any tomatoes) 
- 
One 15-oz can black beans, drained 
- 
Zest of 1 lime (optional) 
- 
1 tablespoon lime juice (about ¼ lime) 
- 
Salt and pepper, to taste 
- 
6 eggs 
- 
                
                
2 tablespoon tomato salsa (preferably GorillaBowlZ) 
- 
¼ cup fresh cilantro leaves 
- 
Sliced avocado 
- 
Corn or flour tortilla 
- 
Feta cheese or crema (Mexican-style sour cream) 
For Serving (optional)
Directions
- Place chopped bacon in a large saucepan, and turn on heat to medium-high. Cook for 5-6 minutes until fat is rendered and bacon is crispy. Transfer bacon to a bowl, leave the rendered fat on the pan. 
- While fat or oil is shimmering, add the onion, bell pepper, salt and cook, stirring frequently, until softened but not browned, about 3 minutes. 
- Add the jalapeno, garlic, cumin, and oregano and cook, stirring, until fragrant, about 1 minute. Add the chipotle and adobo sauce and stir to combine. 
- Add the tomatoes, and black beans, increase the heat to high, and bring to a boil. Reduce to a bare simmer, cover, and cook for 15 minutes. 
- Add lime zest, lime juice, and cooked bacon. Season to taste with salt and pepper. 
- Transfer to a serving plate and serve, with sunny side up eggs, tomato salsa, cilantro, avocado, tortilla, and feta or crema if desired.
